well here it is. the day every newicks cook fears. Mothers day. and to be honest with you .....i'm not ready. They screwed me over on the new schedule so I work 4 doubles in a row now. I don't know if you guys realize this but thats 4 days straight of 10 hours of fish cooking. Now today will be my 5th. So now after working my 4 shifts I have to work one more on top of that because it is required at newicks that everyone works mother's day. Or as we like to call it ....black sunday. In preperation for this doomsday today newicks prepped so much food that you can't walk in our freezer. I alone cooked off about 250 lbs of lobster. We cut probably about 200 lbs of haddock. made 100lbs of coleslaw. And my personal favorite knuckle meat. After we cook off 250 lbs of lobster, you have to break them down..... i. e. seperate them into claws, bodies, tails, and knuckles. Now in order to get the meat out of the lobster's knuckle you jab a little "poker" into it pull out the first half of the meat then rip open the knuckle and pull out the 2nd half. it's quite the process. And yes i did it for all 250 lbs of lobster...... now let's raionalize this...... 250lbs of lobster, we'll be nice and say that each lobster weighs about 1.25lbs, now we take that number and divide it by 250 to see how many lobsters there were..... which gives us 200. multiply that by 2 and you get 400 (a lobster has 2 knuckles) so today bymyself i meated 400 lobster knuckles. I recieved the nick name "knuckle boy" for my efforts. So now at newicks whenever you see me with my hat backwards and my apron on like a cape.... you know that i have just shucked some knuckles. sigh.....shoot me
